In a weight obsessed world, we are mostly told to ditch cholesterol-rich foods, including eggs and their yolks. But science has proven that ditching this part of an egg will do you no good. While it is indeed high in fat and cholesterol, it is actually the most nutritious part that you should definitely consume. Whether you’re on a diet or not, here are the top reasons to eat egg yolks:

1. Incredibly Nutritious

When you eat an egg yolk, you get the following nutrients:

-Choline, which is a B vitamin that is crucial for brain development.
-Lutein and zeaxanthin, which are carotenoids (antioxidants) that help improve or retain vision and more -importantly, fight macular degeneration.
-Vitamins, such as vitamin A, folate, B5, B6, B12, D, E, and K are also present in the egg yolk.
-Minerals, such as selenium, phosphorus, zinc, and calcium are also in the yolk.

When choosing an egg for its nutrients, go for pastured or enriched eggs as they are healthier.

Yolks are definitely not created equal. You surely want to get the best and that means eating egg yolks that are bright orange. Avoid those that are yellow because they are from caged hens that did not receive good, natural diet.

Eggs are good for the body and you shouldn’t throw away egg yolks just to avoid gaining weight.
